Dear readers, we’re approaching Navroze. And mit Dear readers, we’re approaching Navroze. And mitthu monu is a must, diabetes and sugar free diets can wait, jara please! Therefore, over the next week we will be presenting a few Zoroastrian bakers, confectioners, makers of heavenly bliss.Our first showcase is Rashna’s Belamour Boulangerie and Patisserie, an artisanal small batch bakery helmed by Rashna Cherag Elavia. She has over 20 years of experience in the industry but the beginning of her journey was much earlier. As a child she loved her father’s love of the B Merwan mawa cakes and was encouraged in exploring food not only by eating but by making. She helped her grandmother in her kitchen and the beautiful culinary universe fired up her passion. As she grew, she found another love, art. The world of pastry making fused her passion of cooking and art and she was on her way. Hotel Management from the Institute of Hotel Management and Catering Technology Mumbai led her to a more ambitious educational stint at the L’Ecole Chocolat Institute in Canada. Rashna has worked at various luxury hotels as an Executive Pastry Chef and was even nominated for the Wedding Sutra Influencer Award for Trend Setting Cake Design in 2020. Since then Rashna has decided to test her limits as a chef and entrepreneur and set up Rashna’s Belamour in memory of her beloved father. We asked Rashna a few questions, because, why not?Q - What’s your favourite technique and item to bake?Making Macarons needs special skill and attention to detail, the perfect mixing of the macaronage gives you the perfect macaroons. When I see the macaroons rise perfectly that’s what makes my day.Q - Which of your products would you eat yourself first?Classics have always been my favourite. The wholesomeness of a perfectly made classic dessert with different textures and simplicity of flavours have my heart. My personal favourite is the opera and sacher torte, which is the reason I have them in my menu. QQ - How do you innovate new products?I always like to give a twist to the classics which gives you a perfect mix of the flavours and a modern lighter dessert. It’s not often that a dish at a dining experience is so good that you set aside all table etiquette, pick up the bowl and use your fingers to help lick it clean. Chef Viraf Patel’s Himalayan Black Bean Hummus that accompanied a braised lamb made at least three of my dining partners join me in polishing our bowls this way. Besides the incredible dining experience, watching Patel and his small team execute a 6-course meal – his homage to the food of the Levant titled Being a Parsi at The Conservatory in Bengaluru in December 2022, was akin to witnessing the grace and perfect timing of Olympic-level synchronised swimming.

Mumbai-based Patel is a well-known name in the culinary world. He began his career with erstwhile Indigo in Colaba, which incidentally is the current location of Neuma, of which Patel is now chef – a full circle of sorts. He has worked with brands like Impresario Handmade Restaurants, Olive Bar & Kitchen and Independence Brewing Co. Through his Firebred Hospitality Pvt Ltd he set up The Table, and Gateway Taproom, both in Mumbai, Frida Cantina in Goa and The Salt House in Kolkata. His own very popular Café Zoe (2012-2019) did cosy breakfasts by day and transformed into an energetic bar at night, both with equal panache.

Alexander the ‘Accursed’ and Zoroastrianism In Alexander the ‘Accursed’ and Zoroastrianism In his epic the Shahnamah (Book of Kings), the poet Firdawsi (940–1019 or 1025) vividly describes how Alexander (Iskandar/Sikandar) came upon the Persian emperor Darius (Dara) as he fled north after the battle of Gaugamela in 331 BC. Cradling the mortally wounded Dara on his knees, Iskandar promised “Your word is my command, I’ll promise you whatever you want.” (Shahnamah, Dara 9.42). Bandian complex offers time travels to Sassanid er Bandian complex offers time travels to Sassanid era An experience of traveling back in time to see magnificent examples of ancient plasterwork, bas-relief carvings, and other decorative elements is probably an unreachable dream.Bandian complex, a site museum chockful of Sassanid architecture and arts in northeast Iran, offers visitors a time travel to the longest-lived Persian imperial dynasty, which endured for over four centuries, from 224 to 651 CE.Article in Tehran TimesThe archaeological was originally a fire Temple that is situated in Dargaz county of Khorasan Razavi province near the medieval city of Abiward.During the leveling of agricultural land in 1990, this ancient complex was found. Since 1994, there have been excavations and inquiries.In addition, a Zoroastrian sanctuary was discovered during the excavations, with most of its ornamentation and architectural details still intact. A significant portion of the stucco reliefs had survived, though the upper portions had not.The main hall of the fire temple, as well as a number of its rooms and corridors, were discovered during the site's six seasons of excavation.The flat ceiling of the building was supported by four lime columns in the hall. Interesting structural features include the strengthening of the columns. The mihrab (arched niche) of the structure is another noteworthy feature.The spacious hall is covered in numerous stucco reliefs that show scenes from a hunt, battle, triumph, ritual, investiture, and banquet.
Chaos and Nuisance Reign Outside JJ Agiary in Pune Chaos and Nuisance Reign Outside JJ Agiary in Pune Devout Parsis visiting the Sir Jamsetjee Jejeebhoy Agiary on Dastur Meher Road in the Pune Camp area have been sending up a silent prayer for freedom from the chaos prevailing outside their sacred place due to the presence of illegal hawkers.

The community members, known for being peaceful and honest, told Mirror that their long-pending demand to relocate the vendors to another area has been falling on deaf ears of the Pune Cantonment Board (PCB).

A vada-pav centre, close to the gate of the 179-year-old fire temple, is the prominent food stall among many that are doing a roaring business. Customers lining up for the ‘Indian burger’ outnumber those turning up for ‘lassi’ or fruit juice. The rush at any given time of the day leads to traffic jams on the Dastur road and leaves little space for Parsis to enter or exit the place.
